Heritage Chicken in Edinburgh

The Meal Nobody Ever Hears About

What a Michelin chef cooks behind the scenes — and why it’s the most wholesome food they make.

Why Heritage Chicken in Edinburgh Deserves Better

In every high level restaurant kitchen there’s a moment most guests never see — the "Staff Meal", cooked right  before service, by the chefs, for everyone on the team to nourish themselves before a busy service. Honest. Generous. The food a great cook makes when no one’s watching. The one meal nobody writes about, photographs, or reviews. But the food I've most loved cooking (or, always had a soft spot for) has always been that meal.

I'm Rodney Wages. I've spent over 20 years in some of the world's best kitchens — The French Laundry, Benu, Atelier Crenn. I held a Michelin star in San Francisco with Avery. I've brought that restaurant here to Edinburgh, a city I fell in love with.

Kilted Chicken is what happens when twenty years of Michelin thinking meets that bird. No ceremony. No fuss. Just brilliant food to fuel your soul, every night. Using the finest heritage breed chicken Scotland has to offer. Only sourcing sustainably raised poultry on farms that genuinely care. Birds that deserve to be cooked properly.

Properly Raised, Properly Cooked — Our Scottish Heritage Chicken Promise

We work exclusively with heritage breed chicken from Scottish farms committed to sustainable, high-welfare practices. Ethically raised, traditionally farmed, and handled with the same respect we’d give any ingredient in a Michelin kitchen. We know our farmers. We know our birds. That's not a marketing line — it's the foundation of everything on the plate.
